Considerada estimulante cerebral, era alimento importante para os guerreiros antes das batalhas e encarada pelos poetas, como o grego Anacreonte, como símbolo da alegria. Mítico, o fruto da macieira costuma ser associado ao amor e à fertilidade e também ao pecado. No Brasil, algumas das variedades mais comuns, cultivadas no Sul do País, são a gala, a golden delicious, a fuji e a granny smith, esta última de casca totalmente verde e sabor bem ácido. Sejam vermelhas, sejam amarelas ou verdes, doces ou azedinhas, as maçãs podem ser consumidas cruas, in natura, ou ainda em inúmeras receitas. Para evitar isso, devem ser colocadas dentro de água com suco de limão, até serem utilizadas. Sua polpa verde-clara, suculenta e com a &lt;b&gt;&lt;span class="Apple-style-span" style="color: #6fa8dc;"&gt;textura da manteiga&lt;/span&gt;&lt;/b&gt;, tem sabor muito delicado. A palavra abacate deriva de ahuacatl, termo na língua dos astecas para "testículos", numa clara referência a seu formato, embora não houvesse então qualquer vinculação quanto a seus efeitos no desempenho sexual.&lt;/span&gt;&lt;br /&gt;&lt;span class="Apple-style-span" style="font-family: Verdana, sans-serif;"&gt;&amp;nbsp;&amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; No Brasil, foi promovido a afrodisíaco, pelo significado de seu nome na língua tupi: aba = homem, catu = bom, forte. A primeira referência que se tem dele, aqui, é de 1787, quando o naturalista Alexandre Rodrigues Ferreira reporta tê-lo encontrado às margens do Rio Negro. Em 1909, as primeiras sementes e mudas foram trazidas para o Rio de Janeiro. É utilizado em saladas salgadas e entradas frias ou como sobremesa, ao natural ou na forma de creme. Não deve ser preparado com antecedência porque sua polpa escurece rapidamente em contato com o ar. Em pratos como &lt;b&gt;&lt;span class="Apple-style-span" style="color: #6fa8dc;"&gt;guacamole&lt;/span&gt;&lt;/b&gt;, que contém creme de abacate, a adição de suco de limão ajuda a prevenir o escurecimento. Tem textura firme, sabor suave e cremoso, semelhante ao do leite, e aroma láctico. Feito com leite de vaca (em toda Itália) ou de búfala (na região da Campanha e do Lázio), é consumido fresco. É fabricada pelo método de &lt;i&gt;pasta filata&lt;/i&gt; ou pelo método de "esticar queijo". Este método pressupõe que se aqueça a coalhada em água quente, até que ela se torne elástica e forme cordões. Estes cordões são então enrolados em bola, para depois as peças serem cortadas e moldadas. A mussarela de búfala geralmente tem a forma de bolinhas e deve ser conservada em salmoura ou no soro do leite. A de leite de vaca, de formato retangular, é a mais utilizada em culinária. Principal cobertura da &lt;i&gt;pizza&lt;/i&gt;, entra também no recheio da lasanha e em outros tipos de massas, podendo ser usada ainda com legumes. É um queijo próprio para cozimento, bastante apreciado no mundo inteiro. Em 30g deste queijo, encontramos cerca de 85Kcal (calorias), 6,5g de gordura e 25mg de colesterol.
